Neapolitan Cookies
We discovered these delicious cookies three years ago and they immediately became a Christmas cookie "staple". Amy tweaked the recipe this year and it is especially wonderful
Amy's Neapolitan Cookies
1 Cup Butter
1 1/2 Cups sugar
1 egg
1 teaspoon vanilla extract
2 1/2 Cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 Cup chopped nuts (we used walnuts)
1/2 Cup chocolate chips
4 1/2 teaspoons chocolate syrup
red food coloring
Line 9x5x3 loaf pan with waxed paper. In a mixing bowl, cream butter and sugar. Beat in egg and vanilla. Combine flour, baking powder and salt; add to creamed mixture and beat well.
Divide dough into 3 equal portions. Add red food coloring to one portion. In the second portion of dough, add chocolate syrup and chocolate chips. Add chopped nuts to the third dough portion.
Place red dough in bottom of loaf pan, followed by white dough, finishing with the chocolate dough. Wrap well and place in freezer for 4-16 hours. Remove from freezer. Unwrap dough and cut lengthwise into two long portions. Slice each long portion into 1/4 inch slices. Place 2 inches apart on ungreased baking sheet. Bake at 350 degrees for 12-14 minutes. Remove to wire rack and cool completely. Store in air-tight container.
